We consider QCD at nonzero temperature and quark density in the limit of a large number of colors, Nc. We suggest that several distinct phases can arise. Two are familiar: a cold phase of confined hadrons, with a pressure ∼ N c , and hot phase of deconfined gluons, with pressure ∼ N c . For cold, dense quarks, in a narrow (∼ 1/N c ) window for the quark chemical potential, μ, there is first a dilute Fermi sea of baryons. Increasing μ generates dense phases, with a pressure∼ Nc. As illustrated by a Skyrme crystal, these dense phases may break chiral symmetry at small μ, and restore it at large μ. While the pressure is ∼ Nc, like that of quarks, these dense phases are not deconfined: near the Fermi surface, interactions are those of confined baryons. Thus in the chirally symmetric phase, baryons are parity doubled. At low temperature, deconfinement only occurs at asymptotically large densities, such as μ ∼ √ Nc.

We analyze the meson spectrum in SU(N c) lattice gauge theory. We use Wilson quarks to measure the pseudoscalar and vector masses in SU(2), SU(3), SU(4) and SU(6), and extrapolate to the large–N c limit. We find that finite–N c corrections are small at all values of the quark mass.
